Winter Salad: Roasted Beets and Cara Cara Oranges


I roasted a bunch of beets in foil, then cooled and sliced them. Layered with Cara Cara (or blood) oranges, dressed with the simplest vinaigrette ever.

Oh gosh, that reminds me that I did buy an avocado. I have to remember to eat it now. Your salads are inspiring me.

I roast beets in a pan without foil. Never thought of mixing them with oranges. Great idea! I am loving this series.

what a pretty photo! I've been roasting beets like this for a few months - I adore them as you described. Occasionally I'll add feta and toasted walnuts, too.
